Ingredients
4applespeeled and chopped
10ouncessemi-sweet chocolate chips
1½teaspoonsvanilla extract
⅓teaspoonkosher salt
Cocoa powderfor dusting
Instructions
Line an 8x8 pan, or small spring form pan, with parchment paper and set aside.
Add the chopped apples to a large pan and add enough water to cover. Bring to a boil, cook for 15 minutes until very soft but not falling apart.
While the apples are cooking set up the double boiler*. Melt the chocolate over low heat until smooth.
Add the cooked apples, melted chocolate, vanilla extract, and salt to a blender. Blend until completely smooth and glossy. Pour the cake batter into the prepared pan and smooth the top.
Chill overnight, for 8 hours, and dust with cocoa powder before serving.
*To make a double boiler, set a heatproof bowl over a saucepan of gently simmering water, making sure the bowl does not touch the water, then add the chocolate to the bowl.
