Ingredients
1canfull fat coconut milk
2Tablespoonsgranulated sugar
2cupspineapplechopped, fresh or frozen
1teaspoonvanilla extractor rum extract
Instructions
Add the coconut milk and sugar to a small saucepan and heat gently, stirring until the sugar is fully dissolved, about 2 minutes over low heat. Remove from heat and let cool slightly.
In a blender, combine the sweetened coconut milk with the pineapple.
Blend until smooth. Pour the mixture through a fine mesh strainer to remove pulp or fibers, pressing to extract as much liquid as possible.
Transfer to popsicle molds, insert sticks, and freeze until solid, about 4 hours.
