And while I love making homemade strawberry ice cream, these are way easier. The yogurt gives a richness to the popsicle and actually keeps it from being drippy as it melts. I opted for honey because I wanted a light sweetness and no extra sugar.

- Greek Yogurt: I used unsweetened Greek yogurt because it's thicker and creamier than regular yogurt.
- Honey: Use natural sweeteners like honey or maple syrup.
- Vanilla Extract: You can skip if you don't have it, but I like the background flavor it adds.
How to Make Strawberry Yogurt Popsicles

Puree
Add all the ingredients to a blender and blend until smooth. Taste the mixture before transferring to the molds. Add a little extra honey to suit your taste.
Add to Molds and Freeze
Pour the strawberry purée into the popsicle molds, but don't overfill them. Leave a little space on top for them to expand. Feeze for 4 hours, or even better overnight.
Recipe Tip
To remove the popsicles from the molds, let them sit at room temp for a few minutes or dip the bottom of the mold in warm water for 10-20 seconds to loosen it. Don't tug too hard, gently wiggle the popsicle stick side to side until it releases.

Make Ahead and Storing
Make Ahead: You can prep the puree ahead of time and store it in the fridge for 1-2 days. Frozen fruit popsicles will also store well in the freezer for up to 3 weeks.
Storing: Store the popsicles in the freezer for up to three weeks. You can remove them from the mold and wrap them with parchment paper or wax paper. Eat softened popsicles right away and don't refreeze.
